We brought a lot of our own kitchenware, prepared a ton of food to eat on the road, and cooked most meals while there (along with non-vegan options for the rest of the family). Basically, it’s pretty fucking boring. Most activities outside of the house involve alcohol and food. What else can we do (that is NOT exercise!)? How can we build in more drinking? Red wine? Vodka for breakfast?

We have some very exciting visitors coming to Austin on September 17! Just in time for the school year (classes at UT start Wednesday), TPP is taking on a new challenge. We’ll be doing daily workouts and bike rides, and attempting to find satisfying, low-cal meals. We’ll be cutting out the PIZZA, WINE, and ICE CREAM, our major weaknesses. Also part of this challenge will be working on our time-management skills. It’s hard to stay healthy without enough sleep, so a large focus will be placed on having a balanced schedule.
This post wouldn’t be complete without some accountability driven stats! Jessica’s morning weigh-in was 132.8, so let’s see what we can make happen in the next 23 days…

We rarely eat out for lunch, so buying us lunch is pretty cheap! Whole wheat english muffin panini are one of our favorites of late. Jessica prepares them to perfection:
1 double fiber whole wheat english muffin
Olive Oil & Mustard
Sun dried tomatoes (optional)
Thick slice of onion
Sliced turkey or chicken breast
A few turkey pepperoni
Half a slice of gouda or cheddar
Salt & Pepper
Finish with a touch of olive oil on the outside and grill on the Foreman. Serve with fruit.
A delicious, nutritious lunch that is cheap and easy to prepare. Who could pass up lunch for two for $5? You can’t even get that at Church’s Chicken!
